Well, she's my daughter and inspiration for Eva's Patisserie.
Who am I? I am Patissiere Brian Rooney and I believe that if you are going to treat yourself, you deserve the best, and I'm doing my best to bring you exactly that. I am passionate about Patisserie. From Brioche and Palmiers to the most complex of patisserie, the Entremet! Its my mission to put a big smile on your face, and I love nothing more than seeing peoples reactions to my display, and their faces when they try my little delights!
Ive been self-training since just before Eva was born, completed my Cert 3 and 4 in Patisserie, and have continued to grow my skills whilst being a stay at home Dad.
What's an Entremet?
An Entremet is a Patisserie creation that is too complex to simply be called "cake". They consist of many layers such as Mousse, Gel, Cremes, Sponge, Mud, Curds, Shortbread and the list goes on and on depending on your imagination. They are assembled in many different shapes and forms, again only limited by both your imagination and Newtons Laws of Physics ( but I'm working on that last one).
